Pork Salad Greek style

Pork salad with peppers, olives and feta
Macey's Pork Salad Greek style Recipe

Approx 8-12 minutes
Temperature
2 lean pork loin steak

15ml (1tbsp) green pesto
30ml (2tbsp) basil oil (or similar flavoured olive oil)
Mixed leaves, various
100g (4oz) chargrilled peppers (from a jar),sliced
30ml (2tbsp) olives
50g (2oz) Feta cheese, crumbled
Mix together pesto and oil. Preheat griddle pan or BBQ and cook pork steaks for 12-15 minutes, brush with pesto oil 2-3 minutes before the end of cooking. Leave pork to stand.

Add a heap of salad leaves, peppers and olives to a plate and add steak.

Drizzle with pesto oil and crumbled Feta cheese.

Serve with toasted pitta wedges.
