Lamb, Mint and Onion Patties

Lamb, mint and onion patties with onion, apple and leek relish
Macey's Lamb, Mint and Onion Patties Recipe

Approximately 15 minutes
Temperature
450g (1lb) lean lamb mince
10ml (2tsp) mint jelly
1 small red onion, finely chopped

Onion, Apple and Leek Relish:

1 red onion, peeled and finely sliced
75ml (5tbsp) soft dark brown sugar
45ml (3tbsp) white wine vinegar
1 leek, finely sliced
1 large cooking apple, peeled, cored and chopped
1 eating apple, cored and sliced
5ml (1tsp) sweet chilli sauce
In a bowl place lamb mince, mint jelly and onion. Season well and mix together thoroughly.

Divide into 8 and shape into patties. Cook under a preheated grill for 8-12 minutes until cooked through.

To make Onion, Apple and Leek Relish:
Add all the relish ingredients to a large pan. Cover the pan and cook on a reduced heat until the leeks are soft and the apples fluffy, approx 10-15 minutes. Remove from heat and serve either hot or cold.

Alternatively, if you are short on time buy a relish to serve with the patties.

Serve patties with relish and griddled Welsh cakes.
