Sirloin Steak With Wine And Stilton Sauce |

2 lean beef Ribeye fillet, rump or sirloin steaks
15ml (1tbsp) oil
2 cloves garlic, crushed
100g (4oz) mixed mushrooms, sliced
30ml (2tbsp) white wine
45ml (3tbsp) crème fraîche
50g (2oz) Stilton or creamy blue cheese
Pinch sugar, optional

Heat the oil in a frying pan and cook steak – rare 5 minutes, medium 8 minutes or well done 12 minutes. Remove the cooked steak, add the garlic and mushrooms to the pan and gently cook in the steak juices for 1-2 minutes. Add the wine and allow to bubble vigorously for 1 minute. Stir through the crème fraîche and Stilton and cook slowly over a low heat. Taste and add sugar if you prefer slightly sweeter. Pour the sauce over the steak.
Serve with creamy sauce, homemade baked chunky chips and lots of seasonal vegetables. Perfect for Christmas Eve. |
