1.25kg (2½lb) lean beef topside joint
Black pepper
2 onions, cut into quarters
1 bulb garlic
300ml (½pt) beer

Take a lean beef topside joint and calculate the cooking time. Line a roasting tin with foil, place joint in the tin and season. Add onions and garlic, and pour beer over joint. Open roast in a preheated oven, basting the joint during the calculated cooking time. Take the meat out and allow to rest loosely wrapped in foil.
Serve the beef with roasted garlic, roast potatoes and seasonal vegetables.
