Cooking GuidelinesMacey can provide your quail in a marinade of your choice if you order ahead. Wrap each quail in a strip of streaky bacon and a bay leaf. Paint each quail with a little melted butter, season with salt and pepper, then sauté in a pan with a simple vegetable stock for 30-40 minutes or until the quail are cooked through. Regularly baste the birds during cooking. Poor off excess fat and thicken the remaining stock to make a delicious sauce to pour over each bird. |
