| If you don't like turkey, or perhaps you are just bored with the same old thing at Christmas every year, then our free-range geese are the perfect solution. A small goose will feed around 4 people. We stock geese ranging from 4.5kg to over 6kg - a large goose will feed eight to ten people at one sitting. |
Cooking GuidelinesWeigh the bird with giblets, then remove them for making the gravy. Preheat oven to Gas Mark 6, 200°C, 400°F, then cook for the following approximate times, checking and basting regularly: Small 10lb (4.5kg) for 1.5 to 2 hours; Medium 11lb (5kg) for 2 to 2.5 hours; Large 12lb (5.5kg) for 2.5 to 3 hours; Extra large 13 lb+ (6kg+) for 3 to 3.5 hours. Cook until juice runs clear. |
