Cooking GuidelinesPreheat oven to Gas Mark 7, 220°C, 425°F, cook at this high temperature for 20 minutes to seal the juices, then reduce heat to Gas Mark 4, 180°C, 350°F and cook for 30m per pound (450g). During cooking check regularly and pour off excess fat for roast potatoes. |
