| Made from two, three or even four tender racks of lamb with all the excess fat removed, the number of cutlets can vary from 12 to 32. With three per person, servings can therefore vary from 4 to 12 people. We can also provide a variety of fillings for your crown, which in addition to complementing the delicious grass-fed lamb, can also increase the number of servings by approximately one for each 6oz/150g of filling. |
Cooking GuidelinesPreheat the oven to Gas Mark 5, 190°C, 375°F. Cook without stuffing for 20 mins to the lb/450g. The stuffing should be wrapped in foil, cooked separately from the crown and placed inside one or two minutes before presenting to the family or guests. This will give it a lovely golden brown finish. |
