A free-range de-boned large roast chicken with turkey and pheasant fillets layered inside, with the drumsticks left on the bird to maintain the shape. Thee is a choice of various fillings, including celery, walnut, sage and apple; apricot and honey; apple, sage and onion.

Cooking Guidelines

Cook in a Moderately Hot oven, Gas Mark 5, 190°C, 375°F for 25m to the pound and 25m over.
